Instructor and foodie Sophie @vegansophldn will be live from her kitchen, serving up a scrumptious stack of pancakes - using mainly cupboard ingredients so that everyone can get involved.

So make sure you have the ingredients ready to join in...


Buckwheat Pancakes



100g buckwheat flour (if you can’t get your hands on this then plain or self raising will do)

140ml almond milk or any other plantbased milk - we love Plenish milks

20g porridge oats

1tbsp coconut oil plus extra for the pan 

1tsp chia seeds 

dash maple syrup

1tsp baking powder

(optional) 1tsp vanilla or cinnamon


For the topping...

Handful berries (Fresh or frozen, I use frozen blueberries and cherries)

(Optional) spoonful of peanut butter (we LOVE Pics Peanut Butter) or other nut butter

(Optional) spoonful of soya or coconut yoghurt


Makes enough for 1 person (3-4 pancakes).
