Instructor and foodie Sophie @vegansophldn will be live from her kitchen, serving up a scrumptious alternative to beans on toast -using mainly cupboard ingredients so that everyone can get involved (and a side of avo obvs!)

 

Pimped Up Beans on Toast⁠

Serves 1 person, double if making for 2. ⁠
Only takes 10/15 minutes.⁠

1/2 tin butter beans (or cannellini beans if you cant find butter beans)⁠
4 or 5 mushrooms⁠
5 or 6 cherry tomatoes or 1 big tomato⁠
2 garlic cloves⁠
1/2 tbsp tomato puree⁠
About 1/4 can coconut milk⁠
Handful fresh chopped chives or 1tsp dried chives⁠
1/2 tsp paprika⁠
Salt and pepper⁠
1 or 2 slices bread (Soph uses big chunky sourdough)⁠
1/2 avocado⁠
