Instructor and foodie Sophie @vegansophldn will be live from her kitchen, serving up a scrumptious alternative to beans on toast -using mainly cupboard ingredients so that everyone can get involved (and a side of avo obvs!)
Pimped Up Beans on Toast
Serves 1 person, double if making for 2.
Only takes 10/15 minutes.
1/2 tin butter beans (or cannellini beans if you cant find butter beans)
4 or 5 mushrooms
5 or 6 cherry tomatoes or 1 big tomato
2 garlic cloves
1/2 tbsp tomato puree
About 1/4 can coconut milk
Handful fresh chopped chives or 1tsp dried chives
1/2 tsp paprika
Salt and pepper
1 or 2 slices bread (Soph uses big chunky sourdough)
